What Papaya Is:

When you drink a beer, chances are you're imbibing a little bit of papain from this exotic fruit. That proteolytic (protein-digesting) enzyme breaks up particulates in the brew, allowing it to remain clear once It's chilled.

Native to Central and South America but found in tropical climates around the world, papaya plants serve many purposes. The bark is good for making rope. The long leaves turn tough meat into a tenderized treat and serve as a stain-removing soap substitute. The yellowish orange fruit—which may be egg-shaped, pear-shaped, or football-shaped, with a corresponding diversity in length—make great juices, breakfast foods, jellies, and preserves. The milklike juice from unripe fruit, called latex, contains the most concentration of papain—enough, some people say, to remove freckles.
